Roasted slow and low (that is the tempo!) to achieve a nice, cool pink center from edge to edge. The perfect doneness on a perfect cut of meat. Served with our horseradish cream sauce.

We lightly mix ours with just a little crushed buttery Ritz crackers, eggs and other goodies to hold those little nuggets of love together! Dauphinoise Potatoes: These potatoes just sound sexy! And what isn’t sexy about thin sliced Yukon gold potatoes in garlic kissed heavy cream and Gruyere cheese.

Lemon-Parm Grilled Asparagus: Fresh asparagus lightly drizzled with extra virgin olive oil, fresh-squeezed lemon juice, and seasoned with coarse sea salt and fresh cracked pepper.
